Why Spinach?
This was Popeye´s favorite vegetable. Why you ask. It is an excellent source of Vitamin A, manganese, magnesium, iron, vitamin K. copper, Vitamin B2, vitamin B6, vitamin E, vitamin C, potassium, and calcium. In addition, it is a great source of protein and fiber.
As someone with osteoarthritis, I suffer from morning joint stiffness. I have adapted my already healthy diet as part of an early treatment to decrease pain and live a healthier life. Part of my diet includes drinking ginger lemon tea every morning and having a good ratio of Omega 6/3 essential fatty acids in my diet.
I also eat as clean as possible and avoid processed sugar, gluten, and dairy products to prevent inflammation. This is why I am always learning about different and tasty recipes to eat clean and healthy.
I have been finding and creating new recipes that are easy to make and will make my taste buds happy. I will write a bit more about candidiasis in a later post so that you will understand it. The main goal with a candida diet is to eat clean, detox the body avoiding sugar, and eating lots of fresh products.
Creating and finding nice recipes to add flavor to food while on the candida diet is not always that easy, so I hope you enjoy this easy recipe for pesto, which is gluten and dairy-free.
For this recipe, you need a powerful food processor, this one by Bosch is a great option.

Ingredients
- 1,5 dl spinach
- 0,5 dl basil
- 1 garlic clove
- 1/2 dl olive oil
- 0,5 dl walnuts
- 0.5 dl hazelnuts
Preparation
First of all try to get all fresh and organic ingredients for the recipe. Then, mix all ingredients in a blender or food processor and add at the end salt and pepper to taste.
This pesto goes really nice with zucchini noodles. Finally, to add more flavor and consistency to the pesto add 1/4 of an avocado.
Healthy tip:
Try to choose organic ingredients for this recipe in order to benefit from more nutrients, enjoy better taste, avoid hormones, antibiotics and drugs in animal products. Another great reason is that organic farming practices are designed to encourage soil and water conservation and reduce pollution.
